Green Beans with Olive Oil

Ingredients:
2 cans of cut green beans (2X400 gr) or 1000gr fresh cut green beans
4 tablespoons Extra Virgin Olive Oil
1 chopped onion
3 garlic cloves
1/2 lemon; juiced
2 Chopped tomatoes
1 tablespoon sugar
Salt, pepper

Put the olive oil in the pan. When warm, add the onions and sautee them. Add cut green beans, tomatoes, garlic, lemon juice and sautee them for a few minutes. Add 1/2 cups water and sugar. Bring the mixture to a boil; then lower the heat, cover the pot, and simmer gently for about 35 minutes (if beans are fresh) or 15 minutes(if beans are canned),- or until the beans are tender but not too soft.

When cooked, the beans will have changed colour, turning into almost khaki green (if looking bright green still, add a tablespoon of water, and continue cooking). The beans should not be crunchy, but feel soft and moist.

Transfer the mixture to a serving plate, cool it.
After it is cooled down, cover it, and refrigerate for 1 hour. Serve chilled or at room temperature with a drizzle of olive oil and lemon juice on it. (Side dish)

Suggestion: Serve it with rice and salad to make it a whole meal.
